What is Calzone?

Although new to Australia, Calzone has its birthplace in the culinary capital of Italy. Invented in Napoli in 1860 Calzone is also known as folder pizza, the pizza pocket or pizza fritter.

Rather than a topping on a flat base like the conventional pizza the Calzone filling is folded into the pizza dough and then lightly fried. Traditionally the filling consisted of ricotta, basil and a splash of tomato sauce. However, as the trend and demand grew so did the selection of fillings and today there is a filling to suit even the most particular pallet.

Since its contrivance Calzone has been eaten hot or cold, as a savoury snack or main meal, or, enjoyed standing up in the street, as was tradition in the Spanish quarter of Naples.

It is due to its versatility, convenience and wholesome flavour that Calzone is as popular now as it has ever been and it is for this reason that Calzone & Co would like to offer this delicious product to the Sydney café and eatery scene.
